B-A-N-A-N-A bread!

YAYYYYY Banana Bread!

 Ingredients
  • 1 cup granulated sugar
  • 8 tablespoons (1 stick) unsalted butter, room temperature
  • 2 large eggs
  • 3 ripe bananas
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.

Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.

This recipe actually came out really well! We put Nutella on ours, and toasted it in the morning with our breakfast. HIGHLY recommended!

[Foodie Friday] Kitchen Sink Pizza




I made a SUPER easy pizza tonight JUST using whatever i had in the house! A "Bubbly" crust, a little bit of jarred tomato sauce, a little bit of jarred cream sauce, little bit of ricotta cheese, fresh mozzarella cheese [finely shredded], mushrooms and seasonings.


Everyday is CERTAINLY a super great day for pizza!

"After setting up a YouTube channel in April 2007, Charlie started posting Video-Blogs to a small audience, but found YouTube success after a month when one of his videos “How to get featured on YouTube” was, coincidentally, featured on the front of the UK YouTube homepage. His audience jumped from just under 150 subscribers to over 4,400 in a mere two days. Since then, after three years, his audience is still increasing by the thousands each day – all starting because he wanted to find a way to procrastinate from exam revision."

Foodie Friday: Operation: Waffles

My friend Courtney and I were in the mood the mood to make waffles from scratch. We used pancake batter and spread it inside the waffle maker.

Which...apparently there are some "special tricks" since our batter didn't seem to want to be INSIDE the waffle maker.

Eventually we did make some pretty "perfect" waffles.

Although...the 1st [broken] one, browned even more and had more waffle attributes we like, we still enjoyed our almost perfect whole waffles. :D

Foodie Friday! - Baked Brie Bread Bowl.


Say that four times fast!!!

Oh...Brie Bread Bowl...you were a wonderfully horrible thing.

It's so simple, i highly recommend it! But i'm giving you a fair warning. Make sure to invite MANY friends over when you make this. It was SO delicious that my friend Jenny and I DEVOURED it. I said it friends, you have been WARNED! :)


Pre-heat the oven to 350 degrees.

We were searching for Sour Dough round loaf, but found a "semi-sour dough" variety. [i found it to be very good. my friends said it was so-so] First step is to cut out a lid/top of the bread.

Hallow out a decent amount from the inside of the bread to make...ta da! a bowl. Put a wrapped brie round inside the "bread bowl". Add preserves on top. We used Current preserves, but apricot should be very good as well. We added pecans on top as well, but they are purely optional. Then put the bread "lid" on top. Cover it in tin foil and put on a cookie sheet.

Now...i just realized, i have NO idea how long we put that in there for. Ha! I think it was 20 mins. I will have to ask my friend Jenny... Either way, the bread should be a little crispy and the brie should be gooey.


I mean really...how could you NOT want to eat that?? Mmm...


Oh!
I forgot a step. The KEY to this dish... The essence that makes it SO delightful is a secret i will share with you... Make sure to invite your friend over to cook, and then have him sleep on the floor with his legs on the couch...kind of like THIS.


Somehow my friend Chip found this very comfortable. He missed out on not only cooking this delicious dish, BUT he missed out on eating it too. lol

I wonder how long it will be before Chip notices i posted this picture of him on here. I'll keep you posted. ;)

I know it's not a biggie deal to most, but i think sunny side up eggs look SO COOL! I've never cooked one before and when my friend said she wanted a egg over easy i was so intrigued to watch her make one.

It was so pretty, [and delicious looking] that i wanted to try myself! So.. here i am sharing a few pictures. :)

Foodie Friday! - DJ and Carissa's house!


My friend's DJ and Carissa are super swell.

You may know
Carissa...she is an extremely! talented local artist i'm so glad i have the pleasure of knowing IRL. She draws very well, is uber creative and is one of the most inspiring people i know. Her partner DJ is a pretty nifty, artistic guy as well as a very good cook.


For months i've been inviting myself to taste Carissa's hand made lunches that DJ made her, because i want to try just about everything that he creates. So when i had the chance to spend the day with them, i was THRILLED to hear DJ was cooking us dinner. :D



Batsmati rice, fresh shrimp with a thick spiced cream sauce.


It was glorious! [and the perfect ending to a food filled adventure day!]

Food Friday! - Veggies, Pesto and Rhubarb, oh my!!


Last Saturday night my friend Monica came over and we cooked a DELICIOUS meal!! YUM squared! We cooked up these REALLY fun noodles and pesto from Whole Foods.

I made a veggie mix of a peppers, broccoli, roasted red peppers, artichoke hearts, and added soy beans and pine nuts.



THEN! We made a rhubarb and cherry cobbler, which was INCREDIBLY splendid! BUT....silly folks who wrote the recipe...it said it was for 18 people. Ha! Right...we almost devoured half of it just sitting there. I can't even image what a 'serving size' looks like.

Yum for One! - Foodie Friday

I love food. I love to cook. I love reading about other folks food related adventures. I want to be part of that adventure! Ha. Thus!! "Foodie Friday" is born. I know i generally talk about food related things quite often on here, but i will try [[operative word is try!]] to limit my love for food related things to Friday's blog spot.

Enter "Crunchy French Toast". Crunchy French Toast is something my mom used to make us growing up, and a food i still love 20 something years later. Essentially, it's french toast with frosted flakes on it, but it's SO MUCH MORE too! :D

I peeled and sliced one apple [i like fugi-ish type apples for this] and sauteed them with honey and butter and a smidgen of brown sugar. I like my apples al' dente, but you can cook them as long as you like. I put them in a bowl with a litte cinnamon and more honey if you'd like.

I then drudged one piece of Arnold's 7 grain bread in an egg with a little milk and cinnamon in it. Then dipped it into a plate of Frosted Flakes. I put the slice of french toast frosted flake side down on the grill and put more Frosted Flakes on the other side.


Make sure to cook the slice long enough that the egg cooks [i seem to get impatient and take it off the burner/flip too soon] but not too long to burn the bread.

And Voila! YUM for ONE! :)

One Year Ago Today...



One Year Ago today...

* My heart was hurting in places i didn't know existed.
* I was in South Florida taking a two week "life" vacation.
* I was confused to the max about what my future was going to look like.
* I was angry and hopeful about the plans God had for my life.

But more importantly one year ago today,



* My mom bought me a pedicure. Which made my toe-seys look beautiful!!



* I ate a delicious salmon salad at a German restaurant.

And...

* I got to spend a glorious day in Miami with my best friend and THESE delicious cupcakes.



It's amazing how many good things come on bad days. And how WONDERFUL a year can make you feel. I am so blessed. :D

I hope even through the bad, you can see the silver lining in your life!!

One Year Ago Today...

One year ago...THIS was my life. Oh, how quickly a year flies by.



I can't even recall what this is, but i'm sure it was delicious! :p



I've never had a drum stick before this day, one year ago, and wow! was it delicious! I'm still hoping to have another one some day. YUM!





This is my friend Courtney, we made enchiladas i think, went for a walk and enjoyed delicious ice cream. :)



Ricky Frank is an uber talented artist and i had the honor of helping him at the Winter Park Art Festival. It was an amazing experience, and i learned a lot from him.




I hope i get the opportunity to work with him again some time.

But it's not Spring...rolls. :)

I <3 Spring Rolls

Okay..so i have no idea how i have lived 25 years without knowing the lovely goodness that is the spring roll. In fact, after one taste of the delicious peanutbuttery and hosin sauce [ie: peanut sauce] i think i have finally found my true love. When my friends and I were making the spring rolls in the second picture, they actually HID the Peanut Sauce from me. The horror!!

"No Jen, you are going to eat it all!"
"But..it tastes so good on broccoli and bread and carrots and..."



You can understand their concern, i prolly could have consumed this sauce by the cup full.

Anyways, i highly suggest you start venturing into trying new foods, especially those from Vietnam. So far, everything i have tried is quite a dream for my taste buds. Just wait until i blog about the Vietnamese Meatloaf!!
